Wine Description & Tasting Notes

A Unique Expression of Sparkling Sake

Akashi-Tai Junmai Ginjo Sparkling Sake is a beautifully crafted Japanese sake that offers a refined balance of delicate bubbles, fruity aromas, and a smooth, refreshing finish. Made using the traditional brewing techniques of the Akashi Sake Brewery, this sparkling sake showcases the elegance of premium Junmai Ginjo rice polishing, combined with a gentle effervescence that enhances its vibrancy and complexity. Light, refreshing and reminiscent of a more savoury Moscato d’Asti.

Nose: Aromas of fresh pear, green apple, and white peach, with floral hints of jasmine and orange blossom. Subtle rice undertones add depth to the bouquet.

Palate: Soft and lightly creamy on the palate, this sparkling sake offers bright citrus, melon, banana and stone fruit flavors, balanced by a gentle sweetness and refreshing acidity. The fine bubbles enhance the texture, leading to a crisp, clean finish with lingering floral and rice notes.

The History of Sake & Akashi-Tai Brewery

The Legacy of Sake

Sake, Japan’s traditional rice-based alcoholic beverage, has been brewed for over 2,000 years. Originating from ancient brewing techniques that involved fermenting rice, water, and koji mold, sake has evolved into a refined and diverse category of beverages.

Sake brewing flourished during Japan’s Edo period (1603-1868), and different styles such as Junmai, Ginjo, and Daiginjo emerged, each with varying degrees of rice polishing and brewing methods. Sparkling sake, a more modern innovation, combines the elegance of traditional sake with a lively effervescence, making it a unique and celebratory drink.
