Naturally frozen Vidal grapes are hand harvested at -10°C. Pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration.
Tasting Note: A wonderful aroma of candied pineapple, Bartlett pear, honey and caramel. An exotic dessert wine with ripe tree fruit flavours, balancing acidity and a rich mouth-feel. A full-flavoured, exceptionally well-balanced Icewine with flavours of sweet juicy peach, pear and star-fruit. Lingering notes of tangy citrus (lemon drops).
Food pairings: Icewine martini, pâté, salty appetizers, Indian curry or Asian cuisine. Exceptional with flavourful cheeses such as aged cheddar or blue. Perfect with fruit focused desserts such as lemon tarts, flan, and apple strudel. Also delicious with crème brulée, crème caramel or syllabubs.
