Wine Description & Tasting Notes
Named after Dom Pérignon, a Benedictine monk who was an important quality pioneer for Champagne wine but who, contrary to popular myths, did not discover the Champagne method for making sparkling wines.
Dom Pérignon is always a vintage champagne, meaning that all grapes used to make the wine were harvested in the same year. The wine is not made in years when the general quality of the harvest is considered to be too low. The earliest market release of a vintage is usually after 8-10 years for the standard champagne.
Dom Pérignon is always a blend of Pinot Noir and Chardonnay grapes and the final composition changes every vintage.
Great for ageing and as an investment.
Nose: The delicate nose unfolds into the green of eucalyptus, mint and vetiver, the yellow-orange of mirabelle plums, apricot and orange blossom, the brown of pepper, cardamom and licorice sticks, and finally silvery saline and toasty hues.
Palate: Elegant, expressing luxuriant simplicity and precision. The refined and silky foundation becomes more pronounced at the heart. The finish is dominated by a salinity that leaves a deep sensation of consistency.
Food Pairings: Highly recommended to be enjoyed and savoured on its own but loves to be paired with Oysters, Caviar and other fuller flavoured seafood.
